The Filipa Pato 3B Extra Brut Rosé is one of Portugal's most distinctive and celebrated sparkling wines, a traditionally made, zero-dosage expression rooted in the ancient indigenous varieties of the Bairrada appellation. The name 3B encodes the wine's identity: Baga, Bical, and Bairrada, the red grape, white grape, and Atlantic-influenced region that together define it. Filipa Pato launched her own project in 2001, driven by a passion for Bairrada's traditional indigenous varieties. Working with her husband, Belgian sommelier and restaurateur William Wouters, she farms 12 hectares of vineyards across Bairrada using biodynamic practices, producing what the couple calls "authentic wines without makeup." Filipa is also the daughter of legendary Bairrada winemaker Luís Pato, and the house's commitment to native grapes and minimal intervention runs deep.

The blend draws on 30-year-old vines grown on chalky clay. After native yeast fermentation, the wine spends 9 months on the lees and is finished with zero dosage, unfined and unfiltered. The vins clairs are fermented in stainless steel, yielding a wine of deep salmon color with a bouquet of blood orange, rhubarb, rye bread, chalky soil tones, citrus peel, and dried rose petals. Decanter awarded it 92 points, describing it as a wine that exudes texture, elegance, and salinity, with mineral tension, cranberry, pink grapefruit, and pomegranate notes topped by savory aniseed and tarragon. James Suckling awarded 93 points, placing it among his Top 100 Wines of Portugal. Serve well chilled as an aperitif or alongside grilled shellfish, salt cod, or fresh chèvre.
