2025 Gerard Boulay - Sancerre a Chavignol (750ml)
The Boulay family has grown grapes in Chavignol, the heart of the Sancerre appellation, since at least 1380, when town square records name a Jean Boulay as a vineyard owner in the village. That six centuries of continuity still shapes the domaine today, now farmed by Gérard Boulay, who has worked organically since 1990 and takes a hands off approach in the cellar, fermenting with native yeast and using only the lightest touch of sulfur. The result is a Sancerre that leans on instinct and site rather than heavy intervention.
The estate's nine hectares sit on Chavignol's prized "terre blanche," a chalky, limestone rich soil often compared to the Kimmeridgian ground of Chablis, and considered among the finest terroir in the entire Sancerre appellation. Old vines are hand harvested and vinified simply, letting the site's natural minerality carry through into the finished wine rather than layering on winemaking technique.
The glass opens with lemon, grapefruit, pear, and green apple, underscored by hints of cream, lily, and fresh herbs. The palate is notably creamy for a Sauvignon Blanc, built on bright acidity and a chalky, mineral core that lingers into a long finish. Pair it with fresh goat cheese, grilled sole, or a chilled seafood platter.
