2025 La Staffa - Marche Frizzante IGT Mai Sentito (750ml)
La Staffa was founded in 2009 by Riccardo Baldi, a young enologist working in Staffolo, a hilltop town in the Marche known locally as the "Colle del Verdicchio." Baldi farms roughly twelve hectares organically, split between the seven-hectare Contrada Castellaretta and several nearby plots, at elevations between 400 and 500 meters on clay and limestone soils rich in calcium carbonate. In a short span of years he has built a reputation as one of the region's most exciting young Verdicchio producers, gaining international recognition for wines that range from crisp and youthful to age-worthy.
Mai Sentito is built mostly from Verdicchio with a small addition of Trebbiano, hand harvested from the Castellaretta vineyard. After gentle pressing, the must ferments spontaneously using the pied de cuve method, and the wine is bottled before fermentation finishes so it completes in bottle, a stage that can last anywhere from two weeks to fifty days. The wine then rests on its lees in the cellar for at least six months before release.
Pale and slightly veiled in color, it offers an intense, persistent bouquet of yeast, fresh bread, and wild fennel over crisp fruit. The palate is dry, tangy, and refreshing, with real balance and length. It's a natural match for cured meats or simple fish dishes, and equally good as an aperitivo.
