2025 Paros Farming Community - Seiradi Rose Extra Brut (750ml)
Paros Farming Community, also known as Seiradi, is a cooperative winery on the Cycladic island of Paros, begun in 1929 when local farmers joined forces. About 30 growers now supply it, and winemaker Dimitris Mansolas has helped turn it into a modern, quality-focused producer built around the island's native grapes, Monemvasia and Mandilaria.
Vineyards range from sandy coastal sites with limestone and quartz to higher slopes of granite and basalt, climbing as high as 700 meters. Many vines are trained low to the ground in the traditional aplotaria style to resist the strong Aegean winds, and yields are low. This rosé is Paros's first sparkling wine, a 50/50 blend of white Monemvasia and red Mandilaria made by the Charmat method. The wine rests in closed tanks on its lees for four to six months, then receives a low dosage that places it in the Extra Brut category.
Soft pink with subtle coppery reflections, it opens with a lively fizz and fresh cherry, tart lemon, and a pithy citrus snap. The fruit offers a touch of generosity, finishing dry, stony, and refreshing.
