2025 San Salvatore - Paestum IGT Fiano Trentenare (750ml)

Named for the nearby village of Trentinara, this Fiano is farmed organically and biodynamically by winemaker Giuseppe Pagano on calcareous clay soils in the coastal Cilento hills near the ancient Greek ruins of Paestum. Hand-harvested and cryomacerated at low temperature before a cool stainless steel fermentation and six months on the fine lees, with no oak involved. Expect a bright, Mediterranean-leaning style, with aromas of white peach, pineapple, green apple, jasmine, and Mediterranean scrub, moving into a medium-bodied, refreshing palate balancing pulpy fruit with striking saline minerality and crisp, vertical acidity. A vibrant, food-friendly white well suited to shellfish, fried calamari, or a simple crabmeat linguine.
