St. Michael-Eppan is a cooperative winery founded in 1907 in the village of Eppan, or Appiano, in South Tyrol's largest wine-growing municipality at the foot of the Dolomites. The estate today draws on roughly 340 grower families farming close to 390 hectares of vineyards. Cellar master Hans Terzer has led the winery for decades, earning a reputation for precision and innovation, including being among the first in South Tyrol to experiment with barrique aging, and has helped establish St. Michael-Eppan as one of the region's most respected producers.

The Pinot Grigio grapes are sourced from vineyard sites around Appiano along the South Tyrolean Wine Road, where an alpine climate of warm days and cool nights, along with reflected light off the surrounding mountains, gives the fruit both ripeness and sharp definition. After gentle pressing, the wine ferments in stainless steel to preserve its natural freshness and varietal character, with no oak influence used in this bottling.

The 2025 shows a pale straw yellow color with a faint green shimmer, offering aromas of pear, green apple, and citrus alongside a touch of crushed stone and bitter almond. The palate is crisp, focused, and lightly spiced, with a clean, lingering finish. It pairs nicely with cured meats like speck, light seafood, or fresh green salads.
