2025 Winiveria - Khikhvi Classic (750ml)
Winiveria was founded in 2005 by winemaker Mr. Piradashvili and operates as part of Chateau Mere, an agritourism estate in Georgia's Kakheti region that opened its doors to visitors in 2011, combining a working winery with guest accommodations and a restaurant. The winery sources fruit from local growers whose vines average twenty-five to thirty years of age, working with a range of Georgia's indigenous grapes that includes Kisi, Khikhvi, Kakhetian Mtsvane, Rkatsiteli, and Saperavi.
Khikhvi is considered one of Georgia's oldest grape varieties, with some historians tracing it back even further than the better-known Rkatsiteli. This Classic bottling sets the grape apart from Winiveria's amber, qvevri-aged wines by using a European approach instead, fermenting slowly in stainless steel at cool temperatures to protect the grape's natural aromatics rather than macerating it on its skins in the traditional clay vessels used elsewhere in Kakheti.
The result pours pale straw in the glass, with a fragrant lift of apricot, white peach, and citrus blossom. The palate is soft and textural, carrying that same orchard fruit through a clean, linear finish with gentle acidity. It pairs naturally with fresh salads, light cheeses, or a simple plate of grilled fish.
