Akitabare - Suirakuten "Heaven of Tipsy Delight" Daiginjo (720ml)
Akitabare is brewed in Akita Prefecture by a house that still follows "Koshiki Junzukuri," or the old way of making sake. Many of the tools used at the brewery today, including a large wooden basin for soaking rice and a giant kettle for steaming it, have been in continuous use for a hundred years or more. That commitment to traditional methods has earned the brewery a reputation for sake with genuine depth and character rather than modern shortcuts.
Suirakuten is made from Yamadanishiki rice polished down to around 40 to 45 percent, then pressed using the shizuku method, in which the sake is allowed to drip freely from the rice mash rather than being mechanically pressed. It is then aged in the bottle for two years, an unusual step for a daiginjo that lets the flavors mellow and gain complexity rather than being released young and bright.
The result is a soft, gentle sake with a striking nose of berries, mango, and orange blossom, layered with melon, white grape, and a faint minerality reminiscent of rock candy. On the palate it feels quiet at first, then slowly reveals its depth, finishing clean and rounded. It is best served cool and allowed to warm gradually, and pairs beautifully with delicate seafood like halibut or sole, as well as light appetizers.
