Baltimore Spirits Company opened in November 2015 and made history as the first distillery to produce rye whiskey in Baltimore in over fifty years, reviving a craft that once defined Maryland's whiskey identity before Prohibition. The distillery leans into that legacy, sourcing rye grain and malt from Maryland farms and handling every stage of production, from mashing through aging, at its Baltimore City location.

Epoch is built from a mash bill of roughly 70 percent rye grain and 30 percent malted rye, a combination that leans further into rye character than most straight ryes on the market. It is double pot distilled, a slower and more labor-intensive method than column distillation, then matured for a minimum of two years in new, charred 53-gallon American oak barrels. The whiskey is bottled at 50 percent ABV in small batches, keeping each release close to the character of its individual barrels.

The nose offers dried dark fruit and cocoa alongside tobacco, spice, and a touch of sandalwood. On the palate, cinnamon and chocolatey wood notes give way to nectarine and toffee, with the high malt content lending a rounder, softer texture that balances the young rye's natural bite. The finish leans herbal and piney, with lingering char and fruit that reflect the whiskey's Maryland roots.
