Bodegas Barbadillo has been rooted in Sanlúcar de Barrameda since 1821, when Benigno Barbadillo returned from Mexico and purchased the historic bodega that would become the foundation of the company. Still family-run seven generations later, Barbadillo has grown into the largest producer of Manzanilla in the Sherry region, and Atamán, first registered as a brand in January 1943, reflects that deep well of Sherry expertise.
Atamán is built on Manzanilla drawn from the historic Angioletti and El Toro bodegas in Sanlúcar's upper quarter, blended with a careful selection of botanicals dominated by wormwood, quassia, bitter orange, rosemary, and elderberry. Unusually, the finished vermouth is also fortified with a small portion of aged quinquina and vermouth wines that have been resting quietly in the cellars since the 1970s, adding an extra layer of depth that few other vermouths can match.
The result is dense and full-bodied, opening sweet before a wave of spiced bitterness takes hold. Look for dried figs, raisins, and toasted nuts on the palate, closing on a long, slightly bitter finish. Serve it over ice with an orange twist, or alongside cured jamón, marcona almonds, or a semi-hard cheese.
