Barr Hill Reserve Tom Cat Gin comes from Caledonia Spirits, a distillery founded in 2011 near Greensboro and the Barr Hill Nature Preserve in Vermont's Northeast Kingdom, born from a partnership between a longtime beekeeper and a distiller. The company built its identity around raw wildflower honey harvested from local Vermont bees, a philosophy still led today by owner and distiller Ryan Christiansen and rooted in sustainability and northeastern agriculture. Tom Cat takes its name from the black cat signage that once hung outside pubs during England's eighteenth-century Gin Acts, a discreet signal to patrons that a tavern was still selling gin despite steep taxes.

The gin begins as Barr Hill's standard spirit, distilled from a corn base with a single botanical, juniper, then finished with raw honey rather than a long list of spices. That gin is then aged for four to six months in new American oak barrels, a practice common before 1850 but rare among modern producers, giving Tom Cat its rich amber color and bridging the line between gin and whiskey.

The nose offers toasted oak, wildflower honey, and resinous juniper, with hints of cedar and pine sap running underneath. On the palate, warming spice, vanilla, and citrus peel unfold over an earthy, piney backbone, while the raw honey lends a soft sweetness without tipping into syrupy territory. The finish is smooth and full-bodied, with a lingering woodiness that gives it a whiskey-like weight rare in gin.
