Caol Ila 12 yr Whiskey 750ml

Caol Ila distillery has stood on Islay's eastern coast near Port Askaig since 1846, overlooking the Sound of Islay and the Paps of Jura beyond. Owned today by Diageo, it is the largest producer on the island by volume, though the vast majority of its output disappears into blends, most notably Johnnie Walker Black and Double Black. Only a small fraction is bottled as single malt, making Caol Ila something of a hidden giant, far less famous than its Islay neighbors despite its scale.

The distillery draws water from Loch nam Ban, a source that rises through limestone and glacial deposits rather than the peaty hills typical of southern Islay, giving the whisky a distinct mineral brightness. Caol Ila's peated malt is dried to around 35 parts per million, the same specification used for Lagavulin, but an unusual distillation process, with stills run at low capacity around the clock, increases contact with copper and air, yielding a notably mellow, lighter style of Islay peat. The 12 Year Old is matured in ex-bourbon casks and bottled at 43% ABV.

The nose offers smoke balanced by sweetness, brine, and lemon citrus, with a touch of mesquite spice. On the palate, that same smoky sweetness carries through in a medium-bodied, slightly oily texture, joined by chocolate and toasted oak. The finish runs medium to long, with smoke and citrus lingering alongside a gentle peppery warmth.
