Chauffe-Coeur is produced by Martayrol, a family-run distiller whose orchards and distillery sit in Cambremer, in the heart of Normandy's Pays d'Auge. The two brothers who own Martayrol, together with their cellar master, oversee the aging and blending of the house's eaux-de-vie by hand, following methods the family has guarded for decades. Chauffe-Coeur translates loosely as heart warmer, a fitting name for this classic Norman apple brandy.
A wide range of acid and bittersweet cider apples goes into the blend, each variety pressed and fermented separately before the juices are combined. The spirit itself is a blend of single and double distillation, taking only the heart of the run where the fruit character concentrates. Because of that method it carries the broader Calvados designation rather than the Pays d'Auge appellation, though it matures a minimum of six years in Limousin oak. No sugar or caramel coloring is added.
The result is a Calvados marked by baked apple and ripe pear, layered with oak spice, clove, and a touch of nutmeg. Vanilla and toasted almond notes emerge with air, building toward a long, smooth, slightly chocolatey finish.
