Christian Drouin's story began in 1960, when the Rouen industrialist purchased the Fief Sainte Anne farm in the hills near Honfleur, aiming to produce Calvados of the highest quality. He brought on Pierre Pivet, one of the most respected cider distillers of the era, to help realize that vision, and by 1969 his son, Christian Drouin Jr., had joined the family business. The estate, known as Domaine Coeur de Lion, now works with orchards spanning some thirty apple varieties, stored and blended by category of sweetness, bitterness, and acidity before pressing.

This VSOP draws on that full range of sweet, bittersweet, sharp, and bitter cider apples within the Pays d'Auge appellation, fermented slowly before double distillation in traditional copper pot stills. The spirit matures for a minimum of four years in a mix of refill barrels and casks that previously held fortified wine, with a portion of that fortified wine cask aging blended in before bottling to add depth. The Drouin family favors older, second-fill barrels over new oak, a choice meant to protect the fruit character that defines the house style.

The result shows sharp ripe apple and caramelized orchard fruit up front, moving into tarte tatin, dried apricot, and a touch of grape and wine tannin from the fortified casks. Floral notes, soft vanilla, and gentle spice round out a finish that stays elegant rather than heavy.
