Clairin Sajous is an unaged, traditional Haitian white rum produced at Distillerie Chelo by Michel Sajous in Saint-Michel-de-l'Attalaye. Bottled at a natural still strength (around 54%–55% ABV) in a 750ml format, it is crafted from 100% organic, hand-harvested Cristalline sugarcane juice using spontaneous wild-yeast fermentation.

Nose: Fresh grass, green banana, coconut husk, wet earth, and citrus
Palate: Vibrant sugarcane, white pepper, lime oil, creamy tropical fruit, and a distinct olive or saline funk
Finish: Long, herbal, and peppery with lingering mineral and vegetal depth.
