Claque-Pépin is run by Benoît Louvet, who grew up immersed in distilling and aging thanks to his grandfather Vital and later worked as cellar master for other Calvados producers before launching his own estate in 2005. The property sits within the Calvados AOC, positioned between the Pays d'Auge and the Domfrontais, giving Louvet access to both regions' character. His orchards have carried organic certification for over a decade, and he supplements his own fruit with apples and pears bought from a handful of trusted growers, especially in the Domfrontais.

This Fine expression blends the round, refined qualities typical of Pays d'Auge Calvados with the spicier edge associated with Domfrontais production, a combination Louvet considers central to the Claque-Pépin style. The blend is built from cider apples fermented and distilled using traditional methods across Normandy's farms, then aged an average of around three years in oak casks. Because it draws on both regional styles rather than sourcing exclusively from one, this bottling sits outside the stricter Pays d'Auge appellation.

The nose shows bruised red apple, foliage, and light baking spice layered with oak. On the palate, sweet apple is balanced by a savory edge and a moderate, approachable body, finishing clean without heavy tannin.

"Young calvados (average of 3 years) with a golden hue, a pronounced aroma of apples, and a soft mouthfeel. Blend of apples and pears (30%), which come mostly from the Domfrontais area. 40% ABV.

Fine is, by law, aged a minimum of 2 years. The name Claque-Pepin comes from a type of apple variety, which when ripe, rattles when shaken. The name translates to the seeds (pepin) which rattle (claque). The property is located in the Normandie region, nestled between the Domfrontais and the Pay d'Auge, in the 17th century farm next to the ancient chateau of Serans, formerly the family estate of the Louvet family.
