Transitioning to direct sales in the 1990s, the family maintains a small, privately held estate where crushing, distillation, blending, and bottling occur entirely on-site. This expression unifies 70 percent Grande Champagne and 30 percent Petite Champagne eaux-de-vie, both extracted exclusively from Ugni Blanc grapes. The young alcohol ages for twelve months in brand-new medium-toast barrels before moving into seasoned Limousin oak casks. That initial new-wood contact pulls out vanillin molecules and structural polyphenols, establishing a resilient framework specifically suited for extended smoking sessions.
Expect a concentrated nose of honey, gingerbread, saffron, and crisp cranberry rounded by sweet vanilla.
