Cruz de Fuego Cirial Mezcal 750ml
Cruz de Fuego is produced by the mother-son team of Margarita Blas and Carlos Méndez Blas, working under the Productores del Buen Agave banner in Santiago Matatlán, Oaxaca. Like their peers across the region, they rely entirely on their senses to guide production, with no modern instruments used to measure temperature, sugar content, or fermentation progress. Their open-air fermentation process is shaped by whatever wild yeasts happen to be active on the property at the time, meaning the same recipe can shift in character from one season to the next depending on what is blooming nearby.
This expression is distilled from 100% Cirial, a rare and physically imposing variety within the Agave karwinskii family that is uncommon in cultivation and takes considerably longer to mature than farmed Espadín. The piñas are roasted in a conical earthen oven, milled by stone tahona, and fermented in wooden vats before being twice distilled in copper pot stills, a fully traditional process that preserves the varietal's distinct character rather than smoothing it into something more generic.
The nose carries cinnamon, fresh lilac, and rose petal aromatics with a touch of marshmallow sweetness. On the palate the mezcal turns soft and layered, offering bing cherry and delicate fruit alongside earthy smoke, dried herbs, and tea leaf, finishing with a light dusting of cocoa powder.
