Dassai Blue is produced by Dassai Inc., formerly known as Asahi Shuzo, a Yamaguchi based brewery in Japan that famously rebuilt itself from near bankruptcy to become one of the most celebrated names in sake, focusing exclusively on junmai daiginjo. In a bold expansion beyond Japan, the company built a state of the art brewery in Hyde Park, New York, allowing it to craft sake using Hudson Valley water and American resources while staying true to traditional Japanese techniques.

Type 23 is the flagship expression of this new American venture, made from Yamadanishiki, often called the king of sake rice, polished down to an extraordinary 23 percent of its original size. That extreme milling strips away nearly everything but the purest core of the grain, resulting in a sake defined by clarity, elegance, and refinement rather than raw power.

The aroma is delicate and layered, offering pear, anise, and white floral notes alongside hints of marshmallow and honeysuckle. On the palate it turns silky and light, with lemon chiffon, stone fruit, and a faint touch of minerality carrying through to a clean, lingering finish. Serve it well chilled alongside sushi, delicate seafood, or refined French cuisine.
