El Jimador was introduced in 1994 as a sister brand to Herradura, both produced at Casa Herradura in Amatitán, Jalisco. The name honors the jimadores, the skilled workers who hand-select and harvest agave using a razor-sharp coa. During the agave shortage of the late 1990s the brand briefly shifted to a mixto formula, a change that disappointed longtime fans, but by 2009 El Jimador had returned to being a full 100% agave tequila. Today the Reposado accounts for roughly seventy percent of the brand's total production, making it its flagship expression.

The agave hearts are roasted using acid-thermal hydrolysis, then processed through diffuser extraction before fermenting in stainless steel tanks. The spirit is double distilled in column stills using natural spring water, then rested for two months in American white oak barrels once used for bourbon, the minimum period required for reposado classification. That brief oak contact is enough to round off the raw agave edge and lend the spirit its golden hue, while keeping the roasted agave character front and center rather than letting wood take over.

Cooked agave sweetness leads on the nose, joined by vanilla, toasted wood, and a hint of stewed fruit. The palate carries that same vanilla and light caramel into a peppery, cinnamon-spiced midpalate, with a subtle earthy, vegetal note underneath. The finish is smooth and medium in length, closing on warm baking spice and a final touch of red pepper. It works well in a classic margarita or a tequila old fashioned, where its oak notes hold their own against citrus or bitters.
