Evan Williams Single Barrel traces back to Heaven Hill, founded in 1935 by the Shapira family just two years after Prohibition ended, making it a relatively young name among Kentucky's major distilleries. Introduced in the 1990s, Single Barrel set itself apart from the rest of the Evan Williams lineup by releasing a single, vintage-dated barrel each year rather than a blended batch, with the company's master distiller personally selecting each cask.

Every bottle in the series is drawn from one individual barrel and labeled with both its fill and bottling dates, along with the specific barrel number, so no two vintages taste quite the same. The whiskey typically rests more than seven years in charred oak before release, well beyond the four year minimum required for a straight bourbon, and bottles at a consistent 86.6 proof.

The nose leans into dark caramel and sweet, toasted oak with a hint of char. On the palate, the whiskey turns lush and spicy, with oak joined by honey, apple, and orange notes that shift subtly from barrel to barrel. The finish is long, graceful, and unhurried.
