Francis Darroze built his reputation as an Armagnac négociant-éleveur after growing up in his father's celebrated Landaise restaurant in Villeneuve-de-Marsan, where an early exposure to fine wines and local eaux-de-vie set him on a lifelong pursuit of the region's small, distinctive estates. Rather than blending across properties, he pioneered the idea of treating Armagnac like wine, bottling single-domaine, single-vintage spirits that showcase one farm's character in each release. His son Marc now leads the house, continuing the tradition of buying either aged barrels or freshly distilled spirit directly from growers and maturing each lot separately in the Darroze cellars.

This bottling comes from Domaine de Paguy, distilled in 2005 and aged roughly fifteen years before being bottled as part of the Unique Collection, with the exact bottling date marking when its time in barrel stopped. As with all Darroze single-domaine releases, it is bottled at natural cask strength without chill filtration, caramel coloring, or other additives, allowing the terroir of Paguy to come through clearly.

The nose offers candied orange peel, dried apricot, and acacia honey, layered with vanilla and a touch of mint. On the palate it turns supple and melting, with notes of undergrowth, ripe orchard fruit, and warm spice carrying into a long, resonant finish.
