The Giffard family has run the business for four generations since, growing it into one of France's most respected liqueur houses, and the company has more recently extended its expertise in infusion and maceration into a dedicated alcohol-free range built for modern, low-proof cocktails.

The Alcohol Free Pineapple Liqueur is made through a maceration of fresh pineapples, reinforced with a candied pineapple infusion steeped in white wine vinegar, then rounded out with concentrated lemon juice and natural pineapple flavoring. Apple extract lends the liquid its characteristic amber color, and the recipe favors a lower sugar content than many liqueurs to let the pineapple's natural intensity come through. The finished product is bottled in France at under 0.5% alcohol by volume and stays shelf stable for eighteen months unopened.

The liqueur opens with intense aromas of exotic and candied fruit, followed by caramelized pineapple notes on the nose. On the palate, buttered and cooked pineapple meet a gentle acidity from the wine vinegar base, which keeps the sweetness in check and gives way to a long, lingering finish.
