Gilbey's traces its roots to 1857, when brothers Walter and Alfred Gilbey, both veterans of the Crimean War, founded a wine importing business in London's Soho. Rapid growth carried the company into the famous Pantheon building on Oxford Street within a decade, and by 1872 the brothers had opened a gin distillery in Camden Town. The gin proved so popular internationally that a license to produce it domestically was granted in the United States in the late 1930s, and today it is produced under a long-term license by Beam Suntory while the brand itself remains under Diageo's ownership.

Gilbey's is distilled from a base of 100% grain neutral spirit, then flavored with a recipe of twelve botanicals that has stayed largely secret and largely unchanged for generations. Reported ingredients include juniper, coriander, angelica root, orange and lemon peel, cinnamon, and nutmeg, along with less common additions like lemongrass and kalamansi citrus in some current formulations. The gin goes through a double distillation process before bottling, typically at 40% ABV.

The nose opens with bright citrus zest and juniper, backed by dried herbs and gentle spice. On the palate, juniper leads a dry, crisp profile, with citrus brightness, mild coriander warmth, and a background note of cinnamon rounding things out before a clean, moderately long finish. It makes a reliable, no-fuss gin and tonic or Tom Collins.
