Gray Wolf Craft Distilling operates within Windon Distilling in Saint Michaels, Maryland, a state whose own historic rye tradition made it a fitting home for the brand's first whiskey release. Founded by Meghan Brown alongside distiller R.B. Wolfensberger, Gray Wolf built its early reputation on vodka and gin before turning to rye, aiming, in Wolfensberger's words, to create something creative and complex rather than a conventional release.

The whiskey is alembic pot distilled from a mash bill of 60 percent rye and 40 percent proprietary malted barley, then matured through a solera progression across three different cask types. It begins in new charred North American oak, moves into port wine casks to pick up additional depth, and finishes in vats made from Appalachian white oak, a sequence chosen specifically to layer complexity that a single barrel type couldn't achieve. The whiskey is bottled at 93 proof and left non-chill filtered.

The peppery spice typical of rye grain carries through clearly, tempered by a softer sweetness from the malted barley. Cherry and leather notes mingle with cinnamon and vanilla, while a subtle smoky oak undertone rounds out the profile from the barrel progression.
