Hibiki Harmony Whiskey 750ml
Hibiki comes from Suntory, Japan's pioneering whisky house founded in 1899 by Shinjiro Torii. Since 1989, the Hibiki name has represented the pinnacle of Suntory's blending artistry, and the brand's current expressions are shaped by Chief Blender Shinji Fukuyo. Hibiki Japanese Harmony arrived in 2015 as an entry point into this storied lineage, and the whisky's name reflects a philosophy of balance drawn from Japan's traditional 24 seasons, echoed in the bottle's 24-faceted design.
This blend draws on single malt and grain whiskies from Suntory's three distilleries. Yamazaki malt contributes fruit-forward sweetness, Hakushu adds a fresher, herbal character, and Chita grain whisky supplies a smooth, honeyed backbone. In total, roughly ten different malt and grain whiskies are combined, matured across five cask types including American oak, sherry casks, and rare Mizunara Japanese oak, before careful blending brings the components into balance. The whisky is bottled at 43% ABV without an age statement.
On the nose, expect rose, lychee, and orange blossom alongside vanilla and a trace of sandalwood. The palate turns honeyed and fruity, with white peach, apricot, and a touch of cinnamon spice. The finish is long and tender, closing with Mizunara spice and refined oak. It pairs nicely with grilled fish or aged Gouda.
