Jack Daniel's was founded in 1866 in Lynchburg, Tennessee, by Jasper Newton "Jack" Daniel, who learned the craft of whiskey making as a young man under local distiller Dan Call. The distillery is recognized as one of the earliest registered in the United States. In 1907, Daniel passed control of the business to his nephew, Lem Motlow, whose leadership carried the distillery through the challenges of Prohibition and helped establish it as a lasting American institution.

Old No. 7 is made using the Lincoln County Process, a method unique to Tennessee whiskey in which the newly distilled spirit is filtered drop by drop through ten feet of sugar maple charcoal before it ever touches a barrel. This slow filtration strips away harsher notes and lends the whiskey its trademark smoothness. It is then aged in new, charred American oak barrels for a minimum of four years, using water drawn from a limestone cave spring on the property.

The whiskey pours a warm amber and opens with vanilla, toasted oak, and caramel, along with a hint of banana. The palate is smooth and balanced, carrying brown sugar and subtle spice into a clean, gently sweet finish.

"Mellowed drop by drop through 10-feet of sugar maple charcoal, then matured in handcrafted barrels of our own making. And our Tennessee Whiskey doesn't follow a calendar. It's only ready when our tasters say it is. We judge it by the way it looks. By its aroma. And of course, by the way it tastes. It's how Jack Daniel himself did it over a century ago. And how we still do it today.
