Kamoizumi - "Summer Snow" Nigori Ginjo (unpasteurized) (500ml)
Kamoizumi Shuzo brews in Saijo, a district of Hiroshima that has been recognized as one of Japan's premier sake-producing areas for roughly three hundred years, prized for its cold winters, quality water, and steady supply of skilled seasonal brewers. The brewery draws its water from the Kamo spring, which channels the celebrated, medium-hard water of Mount Ryuoh, and it is from this very spring that Kamoizumi takes its name. Hiroshima sakes are known for combining delicacy with real structural strength, and Summer Snow is a vivid example of that balance.
This nigori is brewed from a blend of Hiroshima-grown Yamadanishiki, Hattannishiki, and Nakate Shinsenbon rice, coarsely filtered and polished to roughly 58 to 60 percent. It is bottled undiluted and left unpasteurized, preserving a lively, fresh-from-the-tank character that more heavily processed sakes lose along the way.
The nose carries fresh cut hay and grape aromas, giving way to a rich, creamy palate loaded with honeydew melon, coconut, and cotton candy sweetness that settles into a dry, subtle finish. The texture is thick and almost velvety, more dessert than dry sake. Serve it well chilled alongside spicy Thai or Vietnamese dishes, where its sweetness and acidity can really shine.
