Kilchoman Distillery was founded in 2005 by Anthony Wills on the Isle of Islay, making it the island's first new distillery in well over a century. Kilchoman operates as a farm distillery, growing a portion of its own barley on-site and controlling nearly every stage of production, from cultivation through malting, distilling, maturing, and bottling. That hands-on approach has built the distillery's reputation as one of the island's most inventive modern producers, particularly for its willingness to experiment with unconventional cask types.

This release marks the first time Kilchoman has matured a whisky entirely in Maury casks rather than using them for a finish. Maury is a rich, sweet fortified wine from France's Roussillon region, made predominantly from Grenache Noir grapes, and the spirit was filled directly into these casks rather than transferred later. Nineteen Maury butts were vatted for the release and bottled at 50% ABV, non-chill filtered and at natural colour.

The nose carries dates, dried figs, and orange peel over soft peat smoke, with salted caramel and a savoury, meaty undertone. On the palate, dark chocolate and treacle meet pipe tobacco and warming spice, while the wine cask's vinous richness tempers the smoke without masking it. A long, gently smoky finish rounds things out.
