Kizakura - Tozai "Living Jewel" Junmai (720ml)
Living Jewel takes its name from Japan's colorful koi fish, prized for centuries as symbols of good fortune and perseverance. Their vivid colors and shimmering scales have earned koi the nickname living jewels, an image that inspired both the sake's name and the hand-painted koi artwork found on Tozai's labels. The sake comes from Kizakura, the Kyoto brewery behind the Tozai line, brewed using the soft, mineral rich underground water the Fushimi district is famous for.
Unlike some other Tozai expressions built from Gohyakumangoku or Gin-Ohmi rice, Living Jewel is made entirely from Koshihikari, one of Japan's most widely grown and prized rice varieties, polished to 70 percent. That relatively light polish keeps the sake approachable and easy drinking, in keeping with Tozai's broader mission of making quality Japanese sake accessible for everyday enjoyment rather than reserving it for special occasions.
The result opens with aromas of white grape, anise, and a touch of sweet rice, moving into a palate of citrus, white pepper, and fresh herbs that carries through to a long, clean finish. Serve it chilled alongside baked herbed salmon, grilled lobster, or light poultry dishes.
