Lagavulin Distillery was founded in 1816 by local farmer John Johnston on Islay's south coast, in a picturesque bay within sight of the ruins of Dunyvaig Castle, though the area's history of distilling, much of it illicit, stretches back well before that official start. The distillery's name comes from the Gaelic for "hollow of the mill," and after passing through several owners over the following century, including Peter Mackie, it eventually became part of Diageo's portfolio, with the 16 Year Old joining the company's Classic Malts range in 1988.

Lagavulin's signature intensity comes largely from deliberate production choices. Its wash stills are filled to around 95 percent capacity, well above the industry norm, which limits contact between vapor and copper and carries more of the heavier, flavor-rich compounds through distillation. The spirit cut is also unusually wide, running from roughly 72% down to 59% ABV, preserving phenolic, smoky compounds that many distilleries would otherwise discard. The whisky then matures for 16 years, primarily in refill European oak casks, before bottling at 43% ABV.

The nose brings intense peat smoke and iodine, with an underlying sweetness of dried fruit, sherry, and vanilla. On the palate, rich sherried fruit meets smoke and strong malt character, along with a burst of salt and peppery spice toward the back of the mouth. The finish is long, warm, and peppery, balanced by a persistent sweetness. It pairs beautifully with aged cheddar or dark chocolate.
