Los Siete Misterios began with this very expression. When brothers Eduardo and Julio Mestre first traveled into the Sierra Sur and visited Sola de Vega, they noticed the local mezcal carried a sweeter, spicier character than what they'd tasted elsewhere in Oaxaca, distilled from Espadín in small clay pot stills. That discovery convinced them to build a distillery in the village itself, working alongside local Maestros Mezcaleros under a philosophy they call "from seed to the bottle," and this Espadín remains the brand's founding release.

The agave is cooked in a traditional earth oven fired with wood and river stones, then milled entirely by hand rather than by machine. Fermentation happens naturally before a double distillation through an olla de barro, the clay pot still that defines Sola de Vega's traditional Espadín, Barril, Mexicano, Arroqueño, and Tobalá bottlings. This slower, less efficient method sacrifices yield for character, concentrating the mineral and floral qualities that first drew the Mestre brothers to the region.

The nose carries avocado leaf, fresh herbs, delicate flowers, and citrus over a rich, earthy minerality. On the palate, clay and vanilla cream meet orange and a solid hit of black pepper heat, finishing dry and lingering, not unlike aged cheese and champagne.
