Lustau Vermut Dry Vermouth 750ml
Lustau is a storied sherry house in Jerez, Spain, and since 2015 has worked to revive the old tradition of vermouth-making in the surrounding sherry region, treating its sherry wines as the backbone of the project rather than a novelty base. The Dry expression arrived as the newest addition to a collection that began with the sweet Vermut Rojo and grew to include a Blanco and a Rosé, rounding out the range with a bone-dry style built for the driest martinis.
The vermouth starts with manzanilla sherry aged in SanlĂșcar de Barrameda, a coastal town where humid sea breezes off the Guadalquivir estuary encourage the delicate flor yeast that gives manzanilla its distinctive salinity. That base is fortified with a neutral spirit distilled from AirĂ©n grapes and infused with botanicals including wormwood, thyme, marjoram, orange peel, and chamomile, with little to no sugar added to preserve its bone-dry character.
Bright and briny on the palate, it carries dried-herb aromas of thyme and chamomile alongside green apple and a whisper of tarragon, closing on a tart, faintly bitter, mineral finish. It shines in a bone-dry martini or a Bamboo cocktail, and pairs naturally with green olives or a plate of Marcona almonds and manchego.
