Masumi Origarami Sparkling Sake (750ml)
Masumi is produced by the Miyasaka Brewing Company, founded in 1662 in the town of Suwa, Nagano Prefecture. The brewery built its reputation on precision and reliability, values that trace back to Suwa's history as a center of the silk trade. In 1946, Miyasaka achieved a milestone in Japanese brewing when it isolated Yeast No. 7, a gentle, easy-to-work-with strain that remains one of the most widely used yeasts in sake production today.
Origarami is made from Yamadanishiki rice polished to 55 percent and fermented with Masumi's own No. 7 yeast. Rather than following a conventional sparkling method, it is brewed in a pet-nat style, undergoing a natural secondary fermentation right in the bottle. It is then sold unfiltered and on the lees, a technique that preserves fine sediment and gives the finished sake extra texture, depth, and a distinctly savory character not found in more polished sparkling styles.
The result is a lively, cloudy sake with crisp natural bubbles and wine-like acidity balanced against a creamy, savory core. Expect notes of green apple, pear, and white flowers, layered with a touch of vanilla cream and sour cream tang, finishing on a subtle salty note. Served well chilled, it makes an excellent aperitif or a lively match for oysters, fresh sashimi, or young, mild cheeses.
