Calvados Morin traces its roots to 1889, when the family began distilling in La Haye de Calleville, in Normandy's Risle Valley. Pierre Morin took over the small operation from his father and grew it into one of the region's respected houses, building a reputation for consistent, carefully blended eaux-de-vie drawn from multiple terroirs across the Pays d'Auge.
This expression carries the Calvados du Pays d'Auge appellation, which requires double distillation, a process known locally as repasse. The base is a blend of apple and pear ciders, distilled and then matured for two decades in oak. Much of that aging takes place in cellars cut into the chalk hillsides of the Eure valley, where high humidity slows evaporation and softens the spirit gradually over time, deepening its color and rounding its character.
Two decades in wood give this Calvados a rich amber hue and a layered nose of vanilla, gingerbread, leather, and baked apple tart. Notes of candied fruit and spice linger throughout, while the palate turns smooth and harmonious, closing on a long, warming finish touched with coffee and toasted oak.
