Calvados Morin traces its roots to 1889, when the family business was founded in La Haye de Calleville, in Normandy's Risle Valley. Pierre Morin later took over from his father and built the house's reputation on a distinctive maturing technique still used today, moving young Calvados between dry cellars exposed to seasonal temperature swings and deep, humid troglodyte cellars where the spirit finishes aging. That same expertise carries over into the estate's Pommeau, a specialty rooted in generations of Norman apple-growing tradition.

Pommeau de Normandie is classified as a mistelle, made by blending roughly two-thirds fresh apple must with one-third Calvados that has already rested a year in oak. The combination is stirred gently in vats before moving into large oak barrels, where it matures for around 30 months. This process, historically called mutage, naturally halts fermentation and preserves the fruit's sweetness, and the finished blend settles at 16 to 18 percent alcohol by volume.

The result pours a bright mahogany color with coppery glints. The nose offers fresh and cooked apple alongside vanilla and milk caramel, while the palate turns toward stewed fruit, prunes, honey, and a touch of cocoa. The texture stays round and smooth, closing on a clean, fairly long finish.
