A 15-year-old Speyside single malt that transitions an 11-year sherry wood maturation into a final resting phase inside Tawny Port barriques from Portugal’s Douro Valley.

Situated at the foot of Ben Rinnes, Glenallachie Distillery yields a remarkably consistent grain that historically supplied major blending houses. To craft this release, the young spirit rests for eleven years in 500-litre European oak sherry butts before being transferred into unrefined Tawny Port casks sourced directly from Caves de Murça. The complementary barrel profiles allow residual dried fruit and honeyed sweetness from the sherry to integrate steadily with the bright stone fruit and soft woody tannins contributed during the port finish.

Nose: fruity chocolate, caramelized sugar, and a distinct floral lift.
Palate: lush malt body carrying dense flavors of black forest cake and stewed plum.
Finish: creamy mocha, rich vanilla bean, and a gentle trail of warming spice.

Serve this dram neat at room temperature to fully appreciate the layered wood influence, or introduce three to five drops of filtered water to relax the viscosity and amplify the underlying citrus oil. If you prefer it chilled, a large clear ice cube works well to maintain temperature without rapid over-dilution. Match the spirit with aged edam, raw cacao nibs, or lightly salted almonds to echo the dried fruit and dark chocolate markers.
