Billecart-Salmon was founded in 1818 in Mareuil-sur-Aÿ by Nicolas François Billecart and his wife Elisabeth Salmon, and the house remains in family hands to this day, now guided by the seventh generation. It built its reputation on precision rather than scale, drawing fruit from about 300 hectares spread across forty crus within a short radius of Épernay. In the 1950s the family pioneered a double cold-settling and low-temperature fermentation process, a technique borrowed from brewing that became the defining mark of the Billecart-Salmon style. That commitment to freshness over power has kept the house a favorite among those who prize finesse in their Champagne.

Le Réserve is built from 40% Meunier, 30% Chardonnay, and 30% Pinot Noir, with fruit sourced primarily from the Vallée de la Marne, the Montagne de Reims, and villages along the Marne. The house harvests early to preserve acidity rather than push for ripeness, then ferments each parcel separately in small, temperature-controlled tanks to protect delicate aromatics. A substantial portion of the blend, often more than half, comes from reserve wines built up over many vintages, giving the cuvée added depth and consistency. Dosage sits at just a few grams per liter, placing this bottling at the drier end of the Extra Brut category.

Pale gold with fine, persistent bubbles, this Champagne shows poached pear, dried iris, and red currant, layered with a light bready note from lees aging.
