Billecart-Salmon was founded in 1818 in Mareuil-sur-Aÿ by Nicolas François Billecart and his wife Elisabeth Salmon, and the house remains family-owned to this day. In 1970 Billecart-Salmon released Le Rosé, one of the earliest rosé Champagnes crafted as a serious, stand-alone cuvée rather than a novelty, helping establish rosé as a respected category within Champagne. The house has long been known for a light touch in the cellar that favors freshness and precision.

Le Rosé is made using the assemblage method, blending Chardonnay, Pinot Noir, and Meunier with a small addition of still red Pinot Noir wine sourced from old vines in the Montagne de Reims. The base wine is vinified entirely in stainless steel to protect its fruit character, and the finished Champagne now carries a lower dosage than in years past, placing it firmly in the Extra Brut category.

The wine shows a pale salmon hue with aromas of cranberry, rose petal, red berries, and citrus peel, framed by a whisper of chalk. The palate is refined and bright, with juicy red fruit and cherry flavors carried by a fine, persistent mousse toward a long, saline finish. Pair it with spicy shrimp, sushi, or a strawberry tart.
