Bodegas Barón traces its origins back to 1631, making it one of the oldest wine-producing families in the Jerez region. The estate has remained close to its roots, sourcing fruit primarily from its own vineyards in the Jerez Superior zone, the area of chalky albariza soils considered the finest ground for growing Palomino. Across four centuries the family has built a range spanning the full spectrum of sherry styles, with Micaela standing as its expression of the classic Fino.
Micaela is produced from one hundred percent Palomino Fino grapes, fully fermented before being fortified to around fifteen percent alcohol, a level chosen to encourage a healthy layer of flor to form on the surface of the wine. This yeast veil shields the sherry from oxygen throughout its time in cask, preserving its pale color and delicate character. The wine then spends three to four years aging biologically under flor in American oak casks, moving through the traditional criaderas and solera system that blends younger and older wine to maintain a consistent style.
Bright, pale yellow in the glass, Micaela shows aromas of almonds, fresh yeast, and sea air, with a light floral lift. The palate is dry and lively, offering citrus and a touch of salinity that carries through a long, refreshing finish. Serve it chilled alongside oysters, Manchego cheese, or a plate of cured Spanish meats.
