NV Bollinger - Brut Rose (750ml)
Bollinger has been based in Aÿ since 1829, and the house remains known for a rich, structured style built on barrel-aged Pinot Noir. Roughly eighty percent of each harvest is fermented in oak, giving Bollinger's wines their signature depth and texture. The NV Brut Rosé, first introduced in 2008, extends this house style into a pink Champagne while keeping the addition of still red wine unusually restrained.
The blend leans heavily on Pinot Noir, typically around sixty percent, with Chardonnay and a smaller portion of Meunier rounding it out. Only about five to six percent still red wine, sourced mainly from Verzenay and Aÿ, is added to achieve its color, a lower proportion than most rosé Champagnes use. More than eighty percent of the fruit comes from Grand and Premier Cru vineyards.
The wine shows a pale pink to salmon hue with aromas of raspberry, wild strawberry, and toasted brioche, layered with baking spice and a touch of citrus. The palate is full-bodied and rounded, with a creamy mousse and a long, delicately spiced finish. Serve with grilled langoustine, roast salmon, or a raspberry tart.
