NV Bollinger - Champagne Brut Special Cuvee (750ml)
Founded in Aÿ in 1829 by Athanase de Villermont, Paul Renaudin, and Jacques Bollinger, this house remains one of the few independent, family-run producers left in Champagne. Bollinger owns roughly 178 hectares of vineyard, more than most of its peers, allowing it to supply the majority of the grapes it needs itself. The estate favors Pinot Noir above all, with vines planted in Aÿ, Verzenay, and other prized villages that give the house its signature depth and power. Queen Victoria granted Bollinger a Royal Warrant in 1884, a mark of prestige the label still carries today.
Special Cuvée is built from 60% Pinot Noir, 25% Chardonnay, and 15% Meunier, with about 85% of the fruit coming from Grand and Premier Cru vineyards. Roughly 30% of the blend ferments in small, older oak barrels rather than steel tanks, a labor-intensive method that adds texture and helps the wine age gracefully. Reserve wines, some kept in magnum for up to fifteen years, make up a significant share of the final blend, giving this non-vintage release unusual complexity. Dosage sits at a moderate 7 to 8 grams per liter.
Golden in color with a steady, fine mousse, this Champagne opens with baked apple, pear, and brioche, layered with toasted nuts, chalky minerality, and a touch of spice. The palate is full and rounded yet lifted by bright acidity, finishing long and slightly saline. Pour it alongside roasted turkey, grilled scallops, or a plate of aged Gruyère.
