Domaine Macle is a benchmark Jura estate based in Château-Chalon, where the family tends steep, south-facing slopes of up to 50 percent on Lias marl covered in limestone scree. Jean Macle, a former mayor of the village, shaped its reputation, and his son Laurent now runs the domaine, using organic methods, traditional ploughing, and very low yields.

Macvin du Jura is a traditional regional specialty, a vin de liqueur made by muting fresh grape must with marc du Jura, a spirit distilled from pomace. Here Chardonnay and Savagnin must is combined with the marc, which halts fermentation and preserves the grapes' natural sweetness. The liqueur then ages in oak barrels for at least twelve months, finishing at 17.5 percent alcohol, within the range the appellation requires.

Deep gold with amber glints, it opens with fresh grape, candied apricot, and honey, and with air reveals fig, orange peel, almond, and a light touch of spice. The palate is ample and unctuous, layering candied fruit, honey, and dried fruit, while lively freshness keeps the sweetness in check.
