Eric Rodez is a grower-producer based in Ambonnay, a Grand Cru village in the Montagne de Reims that's home to some of Champagne's finest Pinot Noir. The domaine practices biodynamic and organic viticulture, and in 2012 became the first French agricultural estate to earn Haute Valeur Environnementale certification for its sustainable practices. Rodez farms several small parcels across the village, crafting wines that reflect an unusually precise sense of place for Champagne.

This Blanc de Noirs is made entirely from Pinot Noir grown across a patchwork of Ambonnay Grand Cru plots. The cuvée blends a recent base vintage with a deep reserve of older wines, a method that builds layered complexity across multiple growing seasons. A significant portion of the wine ferments in small oak barrels, and dosage stays low, in keeping with Rodez's extra brut style that lets the Pinot Noir's structure show clearly.

The wine opens with aromas of red apple, wild strawberry, and black cherry, joined by toasted hazelnut, brioche, and a whisper of spice. The palate is full-bodied and structured, carried by a creamy mousse and bright acidity, finishing long with a chalky, saline edge. Serve with grilled quail, duck breast, or aged sheep's milk cheese.

in oak with most of the wines having avoided malolactic fermentation.
