González Byass was founded in 1835, when a young Manuel María González Ángel began aging his first casks in a rented warehouse in Jerez. His uncle, José Ángel de la Peña, known affectionately as Tío Pepe, was a respected sherry expert who encouraged him to take the local product to a wider audience, and the bottling that carries his nickname became the house's signature wine. Still family owned nearly two centuries later, González Byass grew into the largest producer in the Sherry region while maintaining the traditional solera system across its bodegas in Jerez, Sanlúcar de Barrameda, and El Puerto de Santa María.

Tio Pepe is made entirely from Palomino grapes grown around Jerez, including fruit from the noted Carrascal and Macharnudo vineyards northwest of the city. After pressing, the wine develops under flor, a natural layer of yeast that forms on the surface and shields it from oxygen, preserving a pale color and delicate character. It matures for an average of four years within a vast solera system built from tens of thousands of casks, fractionally blended to keep the style consistent from batch to batch before bottling.

Pale golden in the glass, this fino offers aromas of toasted almonds, fresh dough, and green olive, with a subtle saline edge. The palate is bone dry and light bodied, carrying notes of green apple and lemon zest through to a crisp, savory finish. Serve it well chilled alongside marcona almonds, cured jamón, or a plate of briny olives.
