Chão de Sal, which translates to "soil of salt," comes from winemaker Paulo Machado, a native of Pico Island in Portugal's Azores archipelago. This clarete style is a field blend, meaning it's produced the traditional way, from mixed red and white grape varieties, including Merlot, Syrah, Saborinho, Arinto dos Açores, and Verdelho, planted together in old vines over 80 years old. The fruit is sourced from one of the island's oldest vineyards in São Mateus, on Pico's cold southern coast, where volcanic soil and constant maritime exposure shape the wine's character. Both red and white grapes are pressed together and fermented with indigenous yeast in stainless steel, an artisanal, low-intervention approach that preserves the vineyard's natural expression.

The result is a wine with smoky aromas layered over vivid red fruit, bright citrus, and pronounced sea salinity. On the palate it is fresh, mineral, and light-bodied, with an elegant texture that carries the volcanic terroir through to the finish. Produced in extremely limited quantities, it is a distinctive expression of Azorean winemaking.

This versatile red pairs well with grilled fish, white meats, pasta, salads, and even red fruit desserts.
