The Laherte family has farmed in Chavot, on the southern slopes above Épernay, since 1889, and Aurélien Laherte now represents the seventh generation to work the estate. Since taking charge in 2005, he has converted the vineyards to organic and biodynamic practices and become one of the most respected voices among Champagne's grower-producers. Aurélien co-founded a collective of like-minded vignerons to showcase terroir-driven wines each spring, and his hands-off philosophy in the cellar, built on native yeasts and minimal sulfur, has earned him a reputation as one of the region's most thoughtful young winemakers.

This cuvée is built entirely from Pinot Meunier, a grape rarely given star treatment on its own, sourced from vines averaging twenty-five years old, with older parcels reserved for the still red component. The blend combines 60% white wine from grapes pressed and removed from their skins immediately, 30% macerated juice for color and texture, and 10% still red wine, an unusually layered approach that most rosé Champagnes don't attempt. Fermentation takes place across vats, foudres, and barrels, with only partial malolactic conversion, followed by extended aging on the lees and a low dosage at disgorgement.

Deep salmon in color, this Champagne offers wild cherry, blood orange, and dried herbs, layered with a distinct chalky minerality. The palate is vibrant and full-bodied, with fine bubbles and a long, precise finish. It pairs well with duck breast, grilled tuna, or a charcuterie board.

The Extra Brut style yields a Rosé with more breadth and greater vinous

intensity than the Ultradition version. The textural intensity and overall

volume here are so appealing. Hints of orange peel, cinnamon and dried

flowers linger. This release is 60% 2019 and 40% 2018, essentially the

Ultradition with lower dosage, vinified blanc (60%), with maceration (30%)

and saignée (10%). Dosage is 2.5 grams per liter. Disgorged: January, 2022.
