NV Marie Courtin - Champagne Extra Brut Resonance (750ml)
Champagne Marie-Courtin is the work of Dominique Moreau, who named the estate after her grandmother, a woman she once called a true woman of the earth. Moreau farms just two and a half hectares in the village of Polisot, in the Aube district of southern Champagne, and has built her reputation on single-vineyard, single-variety, single-vintage bottlings made without any dosage. Her hands-on, biodynamic approach has earned her a devoted following among growers and sommeliers who prize transparency of terroir over house style.
Résonance is drawn from a hillside parcel of Pinot Noir planted by Moreau's father-in-law in the 1970s, growing on clay and limestone soils with a seam of Kimmeridgian marl similar to what's found in Chablis. The grapes are hand harvested, fermented with native yeasts in stainless steel, and the wine completes its second fermentation in bottle before resting on the lees for several years, disgorged with no added sugar.
The result is pale gold with fine bubbles, showing red cherry, plum, and citrus over a savory, herb-tinged backbone and a chalky, saline finish. Pour it alongside roast pork, aged Comté, or grilled sausages.
