Along the Breede River in Robertson, the Riviersonderend Mountains form a silhouette some see as a dragon, and it was that image, paired with winemaker John Loubser's fascination with the region's ancient, fossil-rich soils, that gave this wine its name. Silverthorn, the boutique Cap Classique house John and his wife Karen have run from their family farm since 2004, built River Dragon around an old-vine Colombard block planted in 1983, a grape rarely given such serious treatment in sparkling winemaking.

The Colombard grapes are harvested from vines now approaching forty years old, then partly wild-fermented in old acacia barrels, with the rest completing fermentation in tank before the two portions are blended. This unusual combination is rare in Cap Classique production and lifts the variety's naturally shy character, adding texture and lifted floral aromatics. The wine then rests on its lees for around a year before disgorgement, sharpening its structure and depth.

In the glass it shows a vibrant green hue with a fine, persistent bead. Chamomile blossom, thatch, and apple blossom lead the nose, joined by hints of stone fruit and tropical fruit. The palate is lean and racy, with bright acidity and a long, faintly saline finish. Excellent as an aperitif, it also pairs nicely with grilled trout or a plate of smoked almonds and biltong.
