Pierre Ferrand comes from Maison Ferrand, the cognac house Alexandre Gabriel founded in 1989 in the Grande Champagne appellation, the smallest and most prized growing area within the Cognac region. While the house is best known for its cognac, made entirely from grapes grown on its own estate vineyards, Gabriel has also revived a number of traditional Charentais products, including this Pineau des Charentes, made according to methods that trace back roughly four hundred years in the region.

Pineau des Charentes is produced by blending fresh, unfermented grape must, largely Ugni Blanc and Colombard, with young Cognac eau-de-vie. The addition of the spirit halts fermentation before it can begin, preserving the natural sugars and fruit character of the grape juice. Under AOC rules, both the must and the eau-de-vie must come from the same harvest, and the blend is then aged together in oak casks for around eighteen months, allowing the two elements to fully integrate. The finished product is bottled at roughly seventeen percent alcohol by volume.

The color is a deep golden amber, with aromas of honey, orange blossom, and toasted nuts alongside notes of peach, plum, and prune. The palate is smooth and rounded, its sweetness balanced by fresh acidity, with subtle rancio character adding depth to the finish.

"This blend of Cognac and grape juice (from Cognac) is aged for 18 months, with 12 of those spent in oak casks. The resulting flavor has notes of peaches, plums, prunes, and toasted nuts. Pineau is often kept cold in fridges throughout the region and is served on hot days when guests arrive, much like ros? in Provence. Because of its sweetness, this also pairs tremendously well with cheese plates, but its also great mixed with brown spirits like rum, rye, and bourbon as a substitute for vermouth."
